Avocado and Tuna Salad Wraps

  • 1 tbsp. lemon juice
  • 1 1/2 tbsp. olive oil
  • Kosher salt and pepper

  • 2 5-ounce cans solid white tuna in water, rinsed
  • 1 avocado, cut into pieces
  • 2 scallions, thinly sliced
  • 2 c. mixed greens
  • 4 10-inch wraps
  1. Step 1In a bowl, whisk together lemon juice, oil, and 1/2 teaspoon each salt and pepper. Toss with tuna, avocado, and scallion. 
  2. Step 2Divide greens among wraps, top with tuna salad, and roll tightly.
